Bon Kimura is currently Professor Emeritus in the Department of Food Science at Tokyo University of Marine Science and Technology (TUMSAT). He graduated from Kyoto University in 1979 and went on to its graduate school, where he obtained his Master's and PhD degrees, and has worked in the field of food microbiology while working for national universities. He became a professor (microbiology, food science) at TUMSAT in 2006. He was appointed Dean of Faculty of Marine Science at TUMSAT from 2012-2015.
He has extensive research and knowledge in food microbiology, including food safety, food and health, foodborne pathogens, food spoilage bacteria and enterobacteria, and has published over 200 international peer-reviewed papers. In recognition of his contributions to the field of food microbiology, he has received the Japanese Society for Food Hygiene Technical Contribution Award (2012) and the Japanese Society for Food Microbiology Award (2019). He has also served as a Japanese national reviewer for Grants-in-Aid for Scientific Research many times and has twice received the Exemplary Reviewer Award (JSPS) (2008, 2012). He served as President of the Japanese Society for Food Hygiene (2017-2019) and Vice-President of the Japanese Society for Food Microbiology (2020-2022). He is also a member of the scientific advisory bodies of the Ministry of Health, Labour and Welfare (2011-2020) and the Cabinet Office (2013-present).
From 2012 to 2024, he has been an editor of the International Journal Food Microbiology, where he has been responsible for the peer review of 1924 articles.
